Brussels Sprouts with Bacon & Chilli
Bump up the volume of your next vegetable side dish with our flavour-packed roasted Brussels sprouts. Softened in Ooni’s cast iron Sizzler Pan and paired with a kick of chilli and crisp bacon shards, you’ll have all your dinner guests reaching for more greens.
Serves 4 as a side dish
2 bacon rashers (strips), cut into small pieces
1 garlic clove, peeled & crushed
400g (14oz) Brussels sprouts, halved & outer leaves removed
2 tbsp maple syrup
1 sprig of thyme, leaves removed
Fire up your Ooni pizza oven. Aim for 200°C (390°F) on the stone baking board inside. You can check the temperature inside your Ooni pizza oven quickly and easily using the Ooni Infrared Thermometer.
Add a little olive oil your Sizzler and place inside the oven to warm up.
Once the pan is warm, add the bacon and garlic to the pan and return to the oven. Cook until the bacon is crisp and the fat has rendered from the bacon. Remove the bacon from the pan and set aside.
Add the Brussels sprouts and chilli flakes to the pan and toss through the rendered bacon fat. Cook in the oven for 12-15 minutes or until the sprouts have softened and are lightly browned – be sure to toss the sprouts every so often to ensure they cook evenly and don’t burn.
Remove the pan from the oven, drizzle over the maple syrup, mix through the cooked bacon and thyme, and season to taste with sea salt. The sprouts can be served right from the pan – use the Sizzler’s fitted wooden board to rest the hot pan on your dining table.
