What exactly is a spiral mixer?

Spiral mixers are built completely differently to the conventional stand mixer you probably have in your kitchen, and were developed because these other mixers just couldn’t handle dough.

A conventional mixer uses only one attachment; forcing a single hook to chase your dough around a stationary bowl. It’s like trying to knead with one hand tied behind your back. 

This method all too often results in tearing the delicate gluten structures in your dough and not incorporating ingredients together well enough to form those strong, elastic strands great bakers look for — all while adding excess friction into the mix, heating and activating yeast prematurely. 

A spiral mixer however replicates the precise and powerful dual-kneading action of a skilled baker’s hands, using three individual but synchronised attachments instead of one to harmoniously fold and stretch dough.

While the spiral hook churns through the mix, the central breaker bar acts as an anchor point, gently catching and feeding dough back to the hook. Meanwhile, a rotating bowl moves in tandem with the hook’s rotation, reducing friction (and heat).
